Strawberry & Avocado Mascarpone Parfait with Sweet Basil Pesto

½ Avocado, mashed
4 oz Crème Friache
4 oz Mascarpone Cheese
½ C Heavy Cream
Zest of ½ Lemon
Zest of ½ Lime
Zest of ½ Orange
¼ C Nature’s Agave AMBER agave nectar

For the Berries
2 pints Strawberries
2 T Nature’s Agave AMBER agave nectar
Juice of ½ Lemon
2 T fruity liqueur of your choice (e.g Grand Marnier, Chambord)

For the Sweet Basil Pesto
2 bunches Basil (approx 2 cups leaves)
½ C Almond Oil
2 T Nature’s Agave AMBER agave nectar
2 T Almonds, toasted


For the Cream
Mix mascarpone and crème friache together in a medium bowl. Reserve.

Whip the remaining ingredients together in a large bowl until the cream forms stiff peaks. Fold into reserved mascarpone and crème friache mixture.

For the Berries
Quarter the strawberries. Add remaining ingredients, stir together gently, and allow to sit for at least 10 minutes and up to 2 hours at room temperature.

For the Sweet Basil Pesto
Place the almonds in a blender and blend until the almonds are a fine powder. Add the remaining ingredients and blend until a smooth paste forms in the blender.

To Assemble the Parfait

Spoon about 2 Tablespoons of the cream into the bottom of a martini glass. Place some strawberries (with the juice) on top of the cream. Drizzle sweet basil pesto over the strawberries. Repeat process one additional time to complete the parfait.
